Yum
This recipe is adapted from one I found on Carolina Rice
Ingredients
4 Cups Chicken Broth
2 Cups White Rice
1 tsp ground achiote (annatto)
1 Bay Leaf
2 Tbsp Olive Oil
1 clove garlic, minced
1 onion, medium diced
1 1/2 lbs Chicken, boneless skinless, bite sized pieces
1 Green Bell Pepper, sliced into long thin slices
1 1/2 tsp basil (dried)
1/4 cup diced, drained pimento or roasted red pepper
1 tbsp lime juice
1 cup frozen peas
1 1/2 tsp salt
Directions
- Turn on Saute, high heat, add tbsp olive oil, wait till IP reads HOT
- Add Onion, and Green and Red Peppers and Achiote, saute for 1-2 minutes.
- Add tbsp olive oil, add garlic and stir till fragrant (30 seconds or less)
- Add Chicken and saute for 4 minutes stirring frequently
- Add rice and stir
- Add broth and stir
- Add bay leaf, basil pimento and lime juice, stir
- Push Off, then put lid on IP, Seal, Press Rice
- When done 10 minute quick release, then stir in salt and taste
- Stir in peas and recover, wait 5 minutes
